My choice for Best Manual Knife Sharpener wasn’t an easy one. I came across plenty of quality manual knife sharpeners in my journeys. The four honorable mentions listed farther down the page were all very close to making it into this top position.
If I am to be completely honest, I must tell you that I actually came extremely close to selecting another manual sharpener for this position. I thought it looked wonderful. It had all the specifications I would hope for in a manual knife sharpener and then some. It boasted the ability to sharpen at two different angles (1degrees and 20 degrees) and included a honing feature. It looked solidly built. It used diamonds to grind the blades down. It sounded perfect and I almost selected it, until I read the consumer reviews. The consumer reviews for that apparently perfect manual knife sharpener were abysmal.
Turning my mind away from the fancy advertising gimmicks which had lured me to the sharpener that I almost selected for this position, I began looking closer at consumer ratings and reviews. Of all the manual knife sharpeners I found, all five included here on this page, the Sunrise Pro had, by far, the most positive consumer ratings. It’s hard to argue with people who have used this device in everyday settings and seen positive results.
Of course, I cannot fit everything I would like to say about this sharpener into one small section on this page while simultaneously explaining why I chose it above all the others. When I set out to look for the Best Electric Knife Sharpener, I told myself that I needed to find one which would make someone’s life easier. I didn’t want to just pick something because it was affordable, because a lot of people liked it, or because it did one really cool thing. I wanted it to be a stable piece of machinery built to actually improve someone’s life.
I wanted one which would create a nice sharp edge. I wanted one which could not only handle a serrated blade but would also straighten its teeth. I wanted one which would be easy to use so that beginners and pros could both hop in and use it without a problem.
Unlike my choice for Best Manual Sharpener, the Chef’s Choice 1was a slam dunk for the category of Best Electric Sharpener. Not only does it come fully loaded with almost everything you could think of, it also received extremely positive consumer reviews. As usual, it will take a little more space to tell you about something as awesome as this knife sharpener.
Wusthof Sharpening Rod
Although everyone has their preferences, I’m the one selecting the Best Sharpening/Honing Rod so I am going to go with my own preference on this one. I decided to choose a rod which both hones and gently sharpens, because that is the kind of rod I like.
Okay, that’s not the only reason. This particular rod has received substantially more positive consumer reviews than all of the others. I suppose that the majority of people agree with me, then. It is difficult to turn down a rod which outperforms the others, though. This Wusthof rod has been specially designed to not only straighten your blade but also to give it a quick sand to keep it sharp for even longer than the typical honing rod.
Don’t worry, if this type of rod isn’t your preference I’ve also included rods made strictly for honing in our “Honorable Mentions” section. First, however, I suggest you take a bit of a closer look at the Wutshof Sharpening Rod to see what all the hype is about.
Chef Sharp 3-Stage Sharpening and Honing System
This Chef Sharp manual knife sharpener is made to sit solidly on your countertop or whatever workspace you like. Its soft, rubbery bottom provides the perfect non-slip surface no matter what type of material you are working on. The smoothest of countertops will be no match for this sharpener, it will stay perfectly still as you work. To offer extra stability and support, this sharpener also includes a horizontal steel handle. Holding onto this handle will not only help to keep your sharpener steady, it will also keep you steady as you draw your blade through either of the two sharpening slots.
The first slot contains carbide blades which effortless shave your blade as you draw it through. The blades feature microscopic carbide particles which help them rough up the edges of the blade as it moves through to get an even deeper shave. The second sharpening slot contains two ceramic rods which work to hone your blade as you draw it through. They gently pull your blade into alignment and buff away the rough edge etched into it in the first stage. You can even choose to skip the first stage and use only the ceramic rods to hone your knife on a regular basis.
Unfortunately, this sharpener is not meant for use with serrated blades, unlike some of the others on this list. Also unfortunate is the fact that I was unable to find any record of the angle degree to which it will sharpen a blade. However, consumers have been very happy with its performance and estimate the angle to be somewhere around 1to 1degrees.
Wusthof Precision Edge 4-Stage Knife Sharpener
At first glance the Wusthof Precision Edge looks as if it is a handheld sharpener. If you read the Knife Sharpener Buying Guide you know that I am not a fan of handheld sharpeners. I find them dangerous and ineffective. Therefore, you can safely assume that I haven’t included any on this list.
The part of this sharpener which makes it appear as if it would be handheld is, in fact, a handle. However, instead of using this handle to hold the Precision Edge in the air, it is actually to provide you extra stability and support while the sharpener is firmly planted atop your counter on its rubber base.
Despite being called a “4-Stage” sharpener, this is actually two 2-stage sharpeners in one. You can easily choose between a two-stage sharpener built for a 2degree angle (1degrees per side) and one built for a 20 degree angle (degrees per side). A sliding plastic guard covers whichever type you are not using to reduce confusion and stop you from accidentally placing your knife into the wrong slot. As someone who likes some knives to be sharper than others, I find this to be quite an impressive feature.
Kitchen IQ 5000Edge Grip Stage Sharpener
The Kitchen IQ Edge is a very uniquely-designed manual sharpener. It has been created to sit on the edge of your countertop or any other flat surface featuring a 90-edge. In fact, it would be great for working atop a picnic table when you are camping. To grip the corner even better, the entire corner-catching edge has been lined with rubber. The rubber continues along the outer edges as well so that you can easily sit this sharpener on top of any flat surface. However, if you choose to do so I must advise you to be careful not to let the tip touch the countertop when you do. Unlike some of the others on our list, this one sharpener will not sit very high up off of the counter and, thus, will not give you much clearance.
This sharpener features two stages, like many of the others on this list. The first stage uses carbide blades to sharpen the knife. The second uses ceramic rods to hone and buff the blade to near perfection.
If you are a fan of matching your small appliances and gadgetry to your interior décor you will be quite pleased to hear that this sharpener is available in three different colors – black, lime green, and red. That being said, I don’t think it should be all that important, considering that this sharpener is so small it can easily be tossed in a drawer or backpack for safe keeping.

How we tested
Japanese bladesmiths have long favored chef’s-style knives with blades that are ultraslim—that is, sharpened to about 1degrees on either side of the blade—and for good reason: In addition to being thin and lightweight, these blades have a supernarrow cutting edge, which helps make them razor-sharp. We’ve also come to favor a thinner edge. After years of testing dozens of knives, our repeat favorite is from Victorinox, a Swiss-made knife that is sharpened to 1degrees on either side of the edge, allowing it to push and slide through food more easily than do more traditional European blades sharpened to at least 20 degrees.
Material World
All knife sharpeners work similarly: The user repeatedly drags the blade against an abrasive surface at a set angle, which trims and reshapes the blade by removing microscopic amounts of metal that are blunted or too far out of alignment. (Honing a blade on a steel is for knives that are less dull, as it simply repositions metal that is only slightly out of alignment.) With electric sharpeners, the abrasives are on motorized wheels that spin against the blade; with manual sharpeners, they’re either on nonmotorized wheels or the abrasive material itself is fashioned into a V-shaped chamber through which the user pulls the knife.
Despite sharing similar mechanisms, the sharpeners we tested produced dramatically varied results. There were differences in user-friendliness: Some came with unintuitive directions and designs or fussy cleaning requirements; others made jarring vibrations or piercing grinding noises. We docked points for all these flaws.
But what really divided the pack was how sharp—or not—the knives were after we sharpened them. Some models barely restored the knife’s edge and others actually damaged it, rendering it uneven or jagged so that the knife struggled when it came in contact with the food. And then there were the best sharpeners, which put such a keen edge on the blade that it felt sharper than it did out of the box.
We first checked to see if electric and manual sharpeners performed comparably—and for routine sharpening, they did. (Repairing deep nicks was another story; more on that later.) It wasn’t until we examined the inner workings of the sharpeners that we realized that two key factors were determining how effectively they sharpened.
First, the type of abrasive. The models we tested used three different kinds: carbides (a combination of metal and carbon), ceramic, and diamond. Our least favorite models featured carbides or ceramic, materials that proved problematic in part because they have what Mike Tarkanian at the Massachusetts Institute of Technology’s Department of Materials Science and Engineering calls a “high coefficiency of friction.” This means that they are relatively sticky and grab at the surface of the blade more than diamond does. As a result, sharpeners made of these materials rough up the surface of the blade, making it move through food less efficiently. In addition, ceramic and carbides are also softer than diamonds and degrade more quickly, shortening the life span of the sharpener; in fact, the ceramic wheels on the electric Shun sharpener sent up a puff of white dust every time we pulled the blade through its chamber.
