electric sharpener Buyer’s Guide
A Fascinating Past
The roots of the modern electric knife sharpener stretch back thousands of years. Knife sharpening stones likely played a prominent role in many human cultures during ancient times. The importance of keeping blades sharp caused some early peoples to use rocks to help maintain knives and other implements.
How to sharpen a knife using sharpening stones
Whetstones for sharpening knives come in a variety of grades. The very coarse 220 grit stone is good for chip repairing. The 1000-1500 grit stone is good for standard sharpening of dull blades. A finer 4000 grit stone is good for polishing a knife’s edge to a fine sharpness for everyday uses. An extremely fine graded 6000-8000 stone is best for an ultra-fine edge for specialty uses like slicing fish.
To sharpen your knife, first submerge the whetstone in room temperature water until it’s saturated. It should take about to minutes. When you are done soaking the whetstone, allow it to stay wet on the surface and don’t wipe off any muddy build up as this will help grind the blade edge of your knife.
As you slide the edge of your blade repeatedly over the whetstone one side and then the other, focus on keeping it at a 20 degree angle or at 1degrees for sushi knives until you achieve the sharpness you desire. Move up to a finer grade stone as needed for the desired edge.
Electric knife sharpener vs sharpening stones
There are advantages to both knife sharpening techniques. With an electric sharpener the biggest advantage is convenience. The best electric knife sharpener is simple to use regardless of your physical ability, a real plus for people with arthritis or other limitations. Unlike sharpening knives with stones, electric sharpeners require very little effort. Time is another factor to consider. Electric sharpeners are by far the faster option. Add to that their ability to sharpen serrated blades and they are the better choice overall.
However if you have a set of fine knives, say for instance Japanese sushi knives, then you would want the control over quality you would find in whetstone sharpening. For subtle control over the exact angle and polish on a blades edge, sharpening your high end knives on a whetstone simply cannot be beat.
So depending on your purposes and situation, there are advantages to be had in both electric and stone knife sharpening. Its important to note that the best electric knife sharpener can sharpen a knife in just a few minutes. Comparing it to a sharpening stone, the latter take many minutes, even hours to complete a correct knife sharpening. For more comparisons on knife sharpeners, you can take a look at this article on manual versus electric.
Using Electric Knife Sharpeners
Even today, many chefs still utilize traditional sharpening devices. However, knife sharpeners that are electric hold an important place in numerous kitchens around the world, too.
Essentially, in most models, a motor powered by electricity turns sharpening surfaces that come into contact with a knife blade as an owner places the blade in a slot that correctly positions the edge. This process may permit the sharpening of these kitchen utensils faster than traditional methods.
Some experts recommend using less high-tech methods for sharpening expensive knives. Numerous chefs have learned to hone blades very accurately using traditional whetstones or river rocks.
Nevertheless, in high-volume environments, where knives dull quickly, electric knife sharpeners enjoy great popularity. They do not require extensive manipulation of the blades.
For this reason, these appliances provide essential assistance in many settings, especially large commercial and institutional kitchens. Amateur cooks appreciate the best electric knife sharpening machines due to their convenience and safety of use.
Size of the unit
The size of your knife sharpener is important. The size of the unit needed depends on the space available and your particular knife sharpening needs. While a larger unit may offer more features, a small compact sharpener will save precious counter and storage space. Most units available take up about as much space as a toaster or blender.
Number of knife blade slots
Multiple blade slots often indicates a multi step sharpening process. The first stage may involve grinding the blade on a hard and abrasive surface. The second and third stages involve smoothing an polishing the blade.
While a unit with just one slot is perfectly functional, a unit with a multi step system is ideal for sharpening may different types of knives. Various slots may also provide for different angles at which to sharpen knives. Certain knives may only be sharpened properly at a specific angle.
Electric knife sharpeners come in all shapes and sizes. The shape and structure of your sharpener can be be important. A handle or grip on one side can provide for ergonomic comfort during sharpening. Some units also have a non-slip base for added safety.
If you want a good electric knife sharpener, you should buy from one of those brands.
Units on the lower end of the price spectrum are most likely more suitable for household needs, while the more expensive units are intended for a commercial or professional setting. The price you pay depends on your specific knife sharpening needs.
However, today manufacturers produce a wide assortment of colors, sizes, specialized units and price ranges.
Available electric knife sharpening machines on the consumer marketplace enable extensive design and feature choices. Prices for simple electric knife sharpeners range from the tens to the hundreds of dollars.
Cutting heavy use materials
A 30 degree angle for knives is greatly recommended for a lot of heavy use materials. This is ideal for cutting wire, cardboard, rope, and thin carpets. It also works just fine for most steels and it is good for axes. 2– 30 degree angles are used on hunting, pocket, and other outdoor utility knives. These types of knives need to have the capability to cut and slice in tough conditions but they are not commonly experienced by regular kitchen knives.
Although there are certain angles and bevels in knives, they tend to match up in terms of sharpness and durability, but they do not need to be used together, which is good. Always keep in mind that determining the blade angle is important by how you want to use the knife, so that way, you can find the right balance of durability and sharpness.
Using super-sharp knives
There are advantages by having a super-sharp knife. Using sharp knives takes less force compared to dull knives, which means less damage to foods as you can look closely when it is cut. When you prepare your food for a dish, it makes your time in the kitchen easier and faster. When you cut, your food using a sharp knife, the good thing is it will not slip. This helps make it easy to control how the blade cuts through the food.
Bells And Whistles
Do some electric knife sharpeners possess extra exciting features? Absolutely! If your budget permits, you might want to consider a unit with a little extra pizazz.
These very hard blades rarely require sharpening but may sustain damage in some cases. Reportedly, some specialized electric blade-sharpening units employ diamond-coated blades capable of honing even ceramic blades. Other popular tough grinding blades include corundum and tungsten carbide.
Additional specialized features on some units include angled blade slots to produce specific cutting edges on specialized kitchen knives and other tools.
These units typically cost more than ordinary electric knife sharpening equipment, and obviously the best electric knife sharpener has all of these features.
Smith’s Electric Sharpeners
What can take hours to do by hand can be accomplished in minutes with a Smith’s best electric knife sharpener, and to a much more precise degree using rapidly-moving wheels made of abrasive, coarse diamond and ceramic. These sharpeners are quite easy to use: simply insert the knife, turn on the tool, make one or two passes depending on the model through the Coarse and Fine slots, and the job’s done, all without exposing fingers to sharp edges or abrasives and with no risk of detempering or damage. If using a serrated knife, a manual slot can be used to get each point razor-sharp. Advanced models can be adjusted to provide the exact level of sharpening needed for any individual knife, including simple pocket knives for every day use, culinary knives of all shapes and sizes, tactical knives for self-defense, or even custom-made knives that require special care. Smith’s, the Edge Experts, have been developing sharpening tools since 1886, and their name has become synonymous with quality knife care products that will keep knife blades sharp and fit for use for years to come.
For top of the line care, Smith’s Adjustable Edge Pro Electric Knife Sharpener provides unmatched quality at an affordable price. This tool works both sides of a knife simultaneously using interlocking coarse diamond and ceramic wheels that automatically align the blade for a perfect sharpening in little time. In addition to a streamlined design that allows the sharpener to fit perfectly in any kitchen, safety is emphasized through non-slip rubber feet keeping everything steady and a comfortable rubber grip to hold while sharpening.
Smith’s knows that not every knife requires the same care, and with that in mind, they’ve included the easy to use Angle Adjust knob that can provide a razor-sharp blade for delicate cutting or a wider edge for a less precise but longer-lasting knife. For finer control, the manual sharpener has specially-crafted wheels that follow the contour of serrated knives, keeping them sharp without wearing them down. This one could easily be the best electric knife sharpener on the market right now.
For knife care on a budget, Smith’s Diamond Edge Elite Electric Knife Sharpener provides high quality sharpening for a very low cost. Interlocking wheels made of coarse diamond and ceramic can provide a uniformly sharp blade with a few simple passes through the the Coarse and Fine slots, with no mess made, no risk of cutting hands or fingers, and no chipping, scratching, or detempering of the steel.
Thanks to carefully-designed guides inside the tool, blades are automatically positioned for a consistent and easy sharpening, but a manual sharpening feature allows for honing serrated blades safely, enhancing the edge on any knife and sharpening both sides simultaneously (this feature makes this machine the best electric knife sharpener for the money). As with other models, this tool has soft, rubber feet to prevent slipping while in use, and a comfortable rubber grip makes keeping the sharpener steady a breeze while in use. Designed with aesthetics in mind, it fits in with any work environment.
Sharpening Rods Included
If you have invested your hard-earned money in a quality set of kitchen knives it is important that you care for them properly. Of course, you could always send them away for sharpening, but why pay money to have someone else do what you could easily do yourself? Not to mention the inconvenience of having to drive them to and from the sharpener or pay shipping and handling to send them by mail.
The days of visiting the knife sharpener are gone. It is rare that you will see a knife sharpening truck roaming the streets, dinging its bell, on a search for customers. Those days are gone because newer, easier methods of sharpening knives have been developed. You no longer need to know special techniques and methods to properly sharpen a knife. You don’t need to worry about holding your knife at the perfect angle to get a nice straight edge.
Newer knife sharpeners have been designed with you in mind. They are quick and easy to use. They figure out the angle for you, so you can focus on learning skills in other areas of your life without wasting time learning how to hold a knife. This page has been designed to bring you the best of the best of today’s most popular kitchen knife sharpeners. Of course, some of the older style sharpeners have prevailed in popularity over the years and we will be sure to include a couple of those here as well.
As you will see, I have included three categories of knife sharpeners here – manual sharpeners, electric sharpeners, and sharpening/honing rods. For each of these I have selected one Best in Class choice to be featured in the Top Three Choices of knife sharpeners.
My choice for Best Manual Knife Sharpener wasn’t an easy one. I came across plenty of quality manual knife sharpeners in my journeys. The four honorable mentions listed farther down the page were all very close to making it into this top position.
If I am to be completely honest, I must tell you that I actually came extremely close to selecting another manual sharpener for this position. I thought it looked wonderful. It had all the specifications I would hope for in a manual knife sharpener and then some. It boasted the ability to sharpen at two different angles (1degrees and 20 degrees) and included a honing feature. It looked solidly built. It used diamonds to grind the blades down. It sounded perfect and I almost selected it, until I read the consumer reviews. The consumer reviews for that apparently perfect manual knife sharpener were abysmal.
Turning my mind away from the fancy advertising gimmicks which had lured me to the sharpener that I almost selected for this position, I began looking closer at consumer ratings and reviews. Of all the manual knife sharpeners I found, all five included here on this page, the Sunrise Pro had, by far, the most positive consumer ratings. It’s hard to argue with people who have used this device in everyday settings and seen positive results.
Of course, I cannot fit everything I would like to say about this sharpener into one small section on this page while simultaneously explaining why I chose it above all the others. I made another page specifically for this sharpener to really give you a clear picture of why people were so happy with it.
Chef’s Choice 1Trizor XV EdgeSelect
When I set out to look for the Best Electric Knife Sharpener, I told myself that I needed to find one which would make someone’s life easier. I didn’t want to just pick something because it was affordable, because a lot of people liked it, or because it did one really cool thing. I wanted it to be a stable piece of machinery built to actually improve someone’s life.
I wanted one which would create a nice sharp edge. I wanted one which could not only handle a serrated blade but would also straighten its teeth. I wanted one which would be easy to use so that beginners and pros could both hop in and use it without a problem.
Unlike my choice for Best Manual Sharpener, the Chef’s Choice 1was a slam dunk for the category of Best Electric Sharpener. Not only does it come fully loaded with almost everything you could think of, it also received extremely positive consumer reviews. As usual, it will take a little more space to tell you about something as awesome as this knife sharpener.
Wusthof Sharpening Rod
Although everyone has their preferences, I’m the one selecting the Best Sharpening/Honing Rod so I am going to go with my own preference on this one. I decided to choose a rod which both hones and gently sharpens, because that is the kind of rod I like.
Okay, that’s not the only reason. This particular rod has received substantially more positive consumer reviews than all of the others. I suppose that the majority of people agree with me, then. It is difficult to turn down a rod which outperforms the others, though. This Wusthof rod has been specially designed to not only straighten your blade but also to give it a quick sand to keep it sharp for even longer than the typical honing rod.
Don’t worry, if this type of rod isn’t your preference I’ve also included rods made strictly for honing in our “Honorable Mentions” section. First, however, I suggest you take a bit of a closer look at the Wutshof Sharpening Rod to see what all the hype is about.
Chef Sharp 3-Stage Sharpening and Honing System
This Chef Sharp manual knife sharpener is made to sit solidly on your countertop or whatever workspace you like. Its soft, rubbery bottom provides the perfect non-slip surface no matter what type of material you are working on. The smoothest of countertops will be no match for this sharpener, it will stay perfectly still as you work. To offer extra stability and support, this sharpener also includes a horizontal steel handle. Holding onto this handle will not only help to keep your sharpener steady, it will also keep you steady as you draw your blade through either of the two sharpening slots.
The first slot contains carbide blades which effortless shave your blade as you draw it through. The blades feature microscopic carbide particles which help them rough up the edges of the blade as it moves through to get an even deeper shave. The second sharpening slot contains two ceramic rods which work to hone your blade as you draw it through. They gently pull your blade into alignment and buff away the rough edge etched into it in the first stage. You can even choose to skip the first stage and use only the ceramic rods to hone your knife on a regular basis.
Unfortunately, this sharpener is not meant for use with serrated blades, unlike some of the others on this list. Also unfortunate is the fact that I was unable to find any record of the angle degree to which it will sharpen a blade. However, consumers have been very happy with its performance and estimate the angle to be somewhere around 1to 1degrees.
Wusthof Precision Edge 4-Stage Knife Sharpener
At first glance the Wusthof Precision Edge looks as if it is a handheld sharpener. If you read the Knife Sharpener Buying Guide you know that I am not a fan of handheld sharpeners. I find them dangerous and ineffective. Therefore, you can safely assume that I haven’t included any on this list.
The part of this sharpener which makes it appear as if it would be handheld is, in fact, a handle. However, instead of using this handle to hold the Precision Edge in the air, it is actually to provide you extra stability and support while the sharpener is firmly planted atop your counter on its rubber base.
Despite being called a “4-Stage” sharpener, this is actually two 2-stage sharpeners in one. You can easily choose between a two-stage sharpener built for a 2degree angle (1degrees per side) and one built for a 20 degree angle (degrees per side). A sliding plastic guard covers whichever type you are not using to reduce confusion and stop you from accidentally placing your knife into the wrong slot. As someone who likes some knives to be sharper than others, I find this to be quite an impressive feature.
Kitchen IQ 5000Edge Grip Stage Sharpener
The Kitchen IQ Edge is a very uniquely-designed manual sharpener. It has been created to sit on the edge of your countertop or any other flat surface featuring a 90-edge. In fact, it would be great for working atop a picnic table when you are camping. To grip the corner even better, the entire corner-catching edge has been lined with rubber. The rubber continues along the outer edges as well so that you can easily sit this sharpener on top of any flat surface. However, if you choose to do so I must advise you to be careful not to let the tip touch the countertop when you do. Unlike some of the others on our list, this one sharpener will not sit very high up off of the counter and, thus, will not give you much clearance.
This sharpener features two stages, like many of the others on this list. The first stage uses carbide blades to sharpen the knife. The second uses ceramic rods to hone and buff the blade to near perfection.
If you are a fan of matching your small appliances and gadgetry to your interior décor you will be quite pleased to hear that this sharpener is available in three different colors – black, lime green, and red. That being said, I don’t think it should be all that important, considering that this sharpener is so small it can easily be tossed in a drawer or backpack for safe keeping.

How we tested
Japanese bladesmiths have long favored chef’s-style knives with blades that are ultraslim—that is, sharpened to about 1degrees on either side of the blade—and for good reason: In addition to being thin and lightweight, these blades have a supernarrow cutting edge, which helps make them razor-sharp. We’ve also come to favor a thinner edge. After years of testing dozens of knives, our repeat favorite is from Victorinox, a Swiss-made knife that is sharpened to 1degrees on either side of the edge, allowing it to push and slide through food more easily than do more traditional European blades sharpened to at least 20 degrees.
All knife sharpeners work similarly: The user repeatedly drags the blade against an abrasive surface at a set angle, which trims and reshapes the blade by removing microscopic amounts of metal that are blunted or too far out of alignment. (Honing a blade on a steel is for knives that are less dull, as it simply repositions metal that is only slightly out of alignment.) With electric sharpeners, the abrasives are on motorized wheels that spin against the blade; with manual sharpeners, they’re either on nonmotorized wheels or the abrasive material itself is fashioned into a V-shaped chamber through which the user pulls the knife.
Despite sharing similar mechanisms, the sharpeners we tested produced dramatically varied results. There were differences in user-friendliness: Some came with unintuitive directions and designs or fussy cleaning requirements; others made jarring vibrations or piercing grinding noises. We docked points for all these flaws.
But what really divided the pack was how sharp—or not—the knives were after we sharpened them. Some models barely restored the knife’s edge and others actually damaged it, rendering it uneven or jagged so that the knife struggled when it came in contact with the food. And then there were the best sharpeners, which put such a keen edge on the blade that it felt sharper than it did out of the box.
We first checked to see if electric and manual sharpeners performed comparably—and for routine sharpening, they did. (Repairing deep nicks was another story; more on that later.) It wasn’t until we examined the inner workings of the sharpeners that we realized that two key factors were determining how effectively they sharpened.
First, the type of abrasive. The models we tested used three different kinds: carbides (a combination of metal and carbon), ceramic, and diamond. Our least favorite models featured carbides or ceramic, materials that proved problematic in part because they have what Mike Tarkanian at the Massachusetts Institute of Technology’s Department of Materials Science and Engineering calls a “high coefficiency of friction.” This means that they are relatively sticky and grab at the surface of the blade more than diamond does. As a result, sharpeners made of these materials rough up the surface of the blade, making it move through food less efficiently. In addition, ceramic and carbides are also softer than diamonds and degrade more quickly, shortening the life span of the sharpener; in fact, the ceramic wheels on the electric Shun sharpener sent up a puff of white dust every time we pulled the blade through its chamber.
Diamond, on the other hand, is the hardest material in the world, which makes it strong and durable for sharpening. Its coefficiency of friction is also relatively low, which allows it to glide smoothly over a knife blade as it sharpens and thus produce a smoother, sharper edge.
Degrees of Sharpness
When manufacturers report that a knife has a 15- or 20-degree angle, they’re referring to the angle of the bevel—the slim strip on either side of the blade that narrows to form the cutting edge. The more acute that angle, the sharper the blade will feel.
We tested nine knife sharpeners, four electric and five manual. Models are listed in order of preference. All were purchased online.
ROUTINE SHARPENING: We bought new copies of our winning chef’s knife, the Victorinox 8″ Swiss Army Fibrox, and assigned one to each sharpener. We dulled them identically and sharpened each according to manufacturer instructions. To rate their sharpness, we slashed sheets of paper and sliced tomatoes and then repeated the dulling, sharpening, and slicing process four more times with different testers. Those that made clean cuts without crumpling the paper or damaging the fruit rated highest.
NOTCH REMOVAL: We filed notches in both ends of each blade and ran them through their respective electric sharpeners (manual models could not remove notches), timing how long—and counting the number of strokes—it took to repair the damage.
Design Trifecta 360 Knife Block
Admittedly expensive, this handsome block certainly seemed to live up to its billing as “the last knife block you ever have to buy.” The heaviest model in our testing, this block was ultrastable, and its durable bamboo exterior was a breeze to clean. Well-placed medium-strength magnets made it easy to attach all our knives, and a rotating base gave us quick access to them. One tiny quibble: The blade of our 12-inch slicing knife stuck out a little.
Schmidt Brothers Downtown Block
This roomy block completely sheathed our entire winning knife set using just one of its two sides—and quite securely, thanks to long, medium-strength magnet bars. Heavy, with a grippy base, this block was very stable. An acrylic guard made this model extra-safe but also made it a little trickier to insert knives and to clean; the wood block itself showed some minor cosmetic scratching during use.
Schmidt Brothers Midtown Block
This smaller version of the Downtown Block secured all our knives nicely, though the blade of the slicing knife stuck out a bit. With a base lined with grippy material, this block was very stable. An acrylic guard afforded extra protection against contact with blades but made it a little harder to insert knives and to clean; the wood itself got a little scratched during use.
Electric sharpeners can often cause more harm than good. They generate heat along the length of the blade, causing it to lose it’s strength and durability.
Most electric models also only allow you to sharpen at one angle. This is also a huge disadvantage. The blade angle and hardness are two core design components of any knife and shouldn’t be changed.
Because the Apex system is manual it does not generate heat. And it is infinitely adjustable in terms of sharpening angle. This means it can be used on anything in your kitchen knife set.
The manufacturing quality is top notch. The sharpening stones glide smoothly along the length of the blade ensuring a consistent bevel.
It’s capability to sharpen knives both large and small is also a big plus. And the safety features such as the built-in stops and guards ensure that you won’t hurt yourself in the process.
Operation & Performance
The Apex sharpener system is specifically designed to be easy to set up and break down. The base has suction cups on the bottom, allowing a stable platform from which to work. All you need is a smooth surface such as a kitchen counter. The suction cups can be removed if you’re going to attach the unit to a work bench.
While most sharpening systems (like the KME) use clamps to hold the blade in place. The Apex uses a patented guide instead. This allows you to sharpen longer and taller blades. There aren’t really any length restrictions and blades as tall as 1/2″ can be accommodated on this system.
Allowing for a range of anywhere from to 2degrees, the Apex offers a great amount of flexibility. There are settings for the most common angles, but you can select any angle you like depending on the blade.
There are quite a few accessories for this particular knife sharpening kit. They are all available separately, or included in the higher end kits. There’s an Apex 2, 3, and even Basically the only thing that changes is the number of stones, accessories, and an instructional DVD.
Things We Don’t Like
Our biggest complaint with any electric knife model, including this one, is that the spinning discs that do the sharpening will heat the blade all along it’s length. This causes an overall weakening of the steel and shortens the usable life of the blade.
We also found that the Edge Pro tends to heat up pretty quickly. We were only able to sharpen 4-knives before we had to wait for it to cool down. Obviously this is not a problem if you’re only sharpening a couple knives at a time.
If you’re interested in speed electric models are the way to go. They’re not as accurate and will struggle with smaller blades like paring and pocket knives. They also have a hard time sharpening knives with a large bolster (like Wusthof’s). Second in terms of speed are sharpening systems.
For those on a tight budget manual sharpeners are fine. They are slower, but will get the job done. They can also handle a wide variety of knives and will not impact the tempering of the steel.
Important Features of Electric Sharpeners
Selecting the best kitchen knife sharpener for your needs is a matter of determining what features you want and how much you’re willing to spend. There are a few important features that should be considered above the rest. Some apply to both manual and electric models. Here they are.
Materials Used for Sharpening
When it comes to materials used in the sharpening of a blade there is a considerable variety out there. They include natural stones and composite materials that have been designed specifically for this task.
Natural stones have been used for thousands of years for sharpening tools, weapons, and knives. Some of the best natural stones come from quarries in Arkansas. While there are several different types they are generally known as Arkansas stones.
Composite or man-made stones are made up of a variety of materials and are generally considered to be more long lasting that natural materials. Much of the time this is a matter of personal preference.
Many of the best electric knife sharpening tools choose man-made diamond abrasives that are bound to wheels for the most effective sharpening. The coarseness of the abrasive changes as your progress through the various stages of the sharpener. Ceramics, steel, and other naturally occurring and man-made stones are also common materials.
Sharpening professionals generally prefer either natural or man-made stones. And while the type of stone is important, it plays a secondary role to using the proper angle to sharpen the blade.
Wicked Edge Precision Knife Sharpener
The last product in our best knife sharpening system comparison is the Wicked Edge Precision sharpener. Founded by Clay Allison and Devin Kennemore back in 2007, the company was started to provide a quality product for outdoor enthusiasts. The biggest difference between this sharpener and the other two is that the Wicked Edge uses two rods rather than one. This enables the user to sharpen both sides of the blade at the same time, speeding up the entire process.
Budget Option: Spyderco Tri Angle
Given the high price of the first three sharpening system options we thought it made sense to include a more budget conscious option. The Tri-Angle Sharpmaker from Spyderco is just that. While this sharpener isn’t as easy to use as the other systems we’ve covered, it still offers excellent results at a significantly lower price. The Spyderco unit is set on a flat surface and the knife blade is dragged along each of the stones. Once the motion is mastered you can quickly create a very sharp edge in very little time.
Infinite Angle Selection
One of the most impressive features of these sharpeners is the ability to select an infinite number of angles. This means if you want to sharpen your 1degree paring knife, you can match it EXACTLY. Or maybe you want to sharpen a hunting knife that has a 30 degree angle. No problem.
If you want to avoid re-profiling your knives and keeping the factory angle, these sharpening systems are probably your best bet.
Manual Pocket Knife Sharpeners
A pocket knife can be a bit challenging to work with on an electric sharpener. They often have shorter, folding blades as well as a wide handle. This makes it difficult to sharpen along the entire length of the blade. Tools designed for your kitchen knives won’t necessarily perform well on pocket knives.
The other upside besides the price is the size of these models. They’re perfect for throwing in a pack or keeping in your vehicle. They’re not necessarily designed to repair damaged blades, but they do a great job restoring a dull knife back to a razor’s edge.
The Blade Medic from Smith’s in particular is a great little unit. It’s easy to use and can fit just about anywhere. I actually have a couple of these little guys stashed around the house and in the car. It’s perfect for touching up a pocket knife, or every-day-carry knife like the North Fork from Benchmade. Another option for pocket knives is any of the knife sharpening systems we’ve reviewed. They allow you to work on just about any size blade with ease.
Sharpeners for Hunting Knives
When it comes to sharpening a hunting knife we almost always recommend going with a stone based sharpener. Most hunters love their knives as much as their dog or their kids and are terrified of scratching or marring the blade in any way.
An electric model is much more likely to cause harm than good. Most models don’t allow you to adjust the sharpening angle, and hunting knives come with a wide array of bevel angles. So if you’re looking for the best hunting knife sharpener I would recommend one of the following.
Products like the Apex, KME, and Wicked Edge are designed to ensure the sides of the blade are protected during sharpening. They also allow you to match the EXACT angle of the blade. This helps improve the durability and longevity of the knife. Besides all that, you’ll never get your knife as sharp with an electric model as you can with a sharpening kit or system. They allow for precise control and pressure throughout the entire process.
Humans have been using stones to sharpen blades for thousands of years. Back in the day it wouldn’t be uncommon for anyone and everyone to know how to use a stone to sharpen their knife. But those days are long gone.
While there truly is no better way to get the perfect edge back on your knife than with a sharpening stone it is a method that requires a great deal of practice to do correctly. Here’s a great video showing the proper technique.
As you can see it requires a decent amount of skill. And even then it can take a while, especially with blades that are damage. For this reason we typically recommend going with one the products listed above.
Professional Knife Sharpening Services
I have used services in the past and they were great. But I didn’t care for having to take them somewhere and then go pick them up. I’m more inclined to do it if I have an electric knife sharpener around the house.
That being said… When a professional truly knows what they’re doing it’s tough to beat the edge they put on a blade. It will be clean, sharp and should last for a good long while. Any sharpener worth their salt will take excellent care not to damage the blade in any way. And of course they can work on just about any knife in the world.
The Japanese have excelled at making knives for thousands of years. They typically come in two different formats.
If you own Japanese knives, this is the single most important factor in choosing the right sharpener. Depending on which type you own you might need a sharpener that is capable of sharpening only one side at a time.
The steel used in Japanese knives is also much harder than that used in Western knives. Since the bevel angle is lower, the steel needs to be harder so that the blade can hold up to use. Harder steel is also more brittle. This is why Eastern-style knives must be handled with such care.
There is nothing more important than a kitchen knife to a Chef. Many knives are designed in a manner that they will last for a very long time. At some point, these knives become blunt and make cooking a mess.
There is a very big difference when preparing food with sharp knives. Do you know that there is a high possibility of risking an injury when using blunt knives? Why risk all that while you can simply buy a knife sharpener in your kitchen.

Presto 088Professional Electric Knife Sharpener
The Presto 088is an electric knife sharpener that delivers professional results for those on a more limited budget. It can take care of any dull knives with powerful accuracy and efficiency. There are many features to be excited about so let’s see what are the abilities of this three-stage sharpener.
One feature worth mentioning is the adjustable blade selector which offers the optimum sharpening angles. Some knives are considerably thicker like hunting knives for example. Others are thinner so you can adapt the machine for your particular knife blade. The standard setting works well with chef’s and kitchen knives while the thin one is adequate for light blades like paring knives.
This is a reliable three-stage electric knife sharpener and the process begins by sharpening the blade with a Sapphirite coarse-grinding wheel to obtain the ideal angle. In stage two the sharpening continues but with a Sapphirite medium-grinding wheel this time to create a precision edge for your blade. In the last stage, the process is completed with an extra-fine-grit ceramic wheel that adds the finishing polish to the blade which gives it a razor-sharp edge.
Presto recommends using it for sharpening kitchen and sporting knives. Dull Santoku knives can also benefit from this treatment. In terms of loudness, this model can be considered relatively quiet compared to older models.
A very simple to use machine, even by a novice, the Presto 088manages to get a spot on this list because it offers decent quality at a low cost. You’ll have a hard time finding a more capable three-stages electric knife sharpener for this price. It may not be well-suited for more high-end knives but this shouldn’t be a problem because it can take care of most common household knives without issues. For a lot of people, this should be enough and if you think this product is a good match for you, you won’t be disappointed by what it can do.
Born from a special partnership between Wusthof and Chef’s Choice, this electric knife sharpener works in three stages and thanks to the Precision Edge Technology, it can maintain a unique edge angle for any blades. If you want to keep your high-quality knives in perfect condition all the time, this machine represents a worthwhile investment.
Wusthof designed this sharpener for non-serrated edge blades, and to keep them like new, the three-stage process involves lots of fine sharpening, honing, and polishing at a 14-degree angle. In the first stage, a 100% diamond abrasive wheel carves a new edge onto the dull knife blade. After this is done, in stage two it’s time for refining the edge and for this purpose, the slot provides a finer grit diamond wheel. An advanced stropping material in stage three adds the finishing touches so that your knife’s blade is polished to a razor-sharp edge.
The Precision Edge Technology of this machine really makes a difference as the sharpener will guarantee amazing results every time. Wusthof accepts pretty much all western-styled knives and will turn them into sharp tools that you know you can depend on.
It’s important to maintain your sharpener in good condition and so it is recommended to wipe the sharpener with a damp cloth after each use. Every few months, the accumulated metal dust found on the underside of the sharpener needs to be removed and that’s all the basics.
Wusthof is a very reputable maker of high-quality German kitchen knives and this sharpener is destined for the American market as it’s manufactured by Chef’s Choice to fit the electrical standards from the United States.
Putting a new edge on an intensely used chef knife seems to be the primary purpose of this device. The knives will be able to slice paper and little hair off your arm flawlessly.
